Camping recipe: a different kind of couscous

It might sound familiar: when I go camping, I don’t exactly feel like cooking something spectacular every day. The thing is, though, that after a few days of pasta, rice or potatoes, you feel like something a little more special. That’s when a plate of hearty couscous is a delicious solution. It only takes 15 minutes, it’s healthy and it’s something different for a change. Especially if you try this recipe with avocado, goat cheese and crunchy bacon. Not a fan of goat cheese? Try feta cheese instead. You can also swap the avocado for sundried tomatoes. Enjoy!
Couscous with avocado and bacon
This is what you need for 4 people:
- 300 grams couscous
- 100 grams smoky bacon
- 1 avocado
- 2 tomatoes
- 100 grams soft goat’s cheese
- 30 gram pine nuts
- pinch of salt
- pinch of black pepperr
- 2 tablespoons olive oil
- 1 tablespoon cider vinegar
- 200 grams of fresh spinach, washed
And here’s how you make it:
Cook the couscous according to the instructions on the packet. In the meantime, fry the slices of bacon on both sides until they are nice and crispy. Once they’re cooked, cut the bacon into pieces. Then also chop the avocado, tomatoes and goats cheese into pieces. Quickly dry fry the pine nuts in another frying pan. Put the couscous in a large bowl, and add salt and pepper to taste. Then add the olive oil and the vinegar. Mix this with the spinach, and divide the mixture evenly onto your plates. Then garnish with the avocado, bacon, pine nuts and goats cheese.
