4 easy recipes for a delicious campsite dinner

Are you someone who loves to cook delicious meals for family and friends? Did you know you can also do that when you go camping? Whatever you choose to use, a barbecue, a party grill, a gas stove or something else, it’s always possible to make a delicious campsite dinner. Even if you’re on a tight budget – after all, holidays are expensive enough! The dishes below are suitable for 4 people, and all use ingredients that you can easily buy cheaply, wherever you are.
Lasagne on the Party Grill
You don’t need an oven to make lasagne, you can also make it on a Party grill if you use the lid! You’ll also need a heat-resistant dish to make this delicious lasagne.
Ingrediënten:
- 300 grams of minced meat
- Chopped Italian vegetables
- Dried Lasagne pasta sheets
- 500 grams tomato sauce
- Grated cheese
Method:
Put the party grill on a low heat, and cook the lasagne sheets until ‘al dente’ while the grill heats. Fry the mince in a separate pan until browned, then add the vegetables and fry for another 5 minutes. Pour over the tomato sauce, and let it simmer for 3 minutes. You can also add some herbs such as oregano or basil, for extra flavour!
Then start layering the ingredients in your heat-resistant dish. Begin by covering the bottom of the dish with some of the sauce, then add a layer of pasta sheets, and another layer or sauce. Continue doing this until the dish is full, and finish with a layer of grated cheese.
Put the dish on the party grill and put the lid on the party grill. Leave the dish to cook for about 30 minutes. Do keep an eye on the dish!

Spanish Tortilla from the pan
Did you know that they eat tortillas in Spain as well as in Mexico? But Spanish tortillas are usually made using potatoes and eggs. And you can add whatever vegetables you like to a Spanish Tortilla. How about fresh spinach, leek, or onion? Here’s our version:
Ingrediënten:
- 1 onion, sliced into half rings
- 1 pepper (any colour), chopped
- 1 clove of garlic, chopped
- 5 eggs
- 100 grams chorizo, finely chopped
- 75 grams grated cheese
- 4 large potatoes, peeled and sliced thinly
Method:
Once you’ve prepared all the ingredients, you can get started! Begin by briefly boiling the potato slices until they are ‘al dente’. In the meantime, fry the onion and the garlic in a frying pan, then add the pepper. Then add the potato slices, and cook for about 7 minutes. You can then add the chorizo, and cook for a further 3 minutes. In the meantime, lightly beat the eggs, and then stir the cheese into the eggs. Pour the egg mixture over the vegetables, chorizo and potato. Turn the heat to low, put a lid on the pan, and bake the tortilla till done in about 20 minutes. Turn the tortilla over in the frying pan, and cook the other side for about 5 minutes. Tadaa! A delicious dinner full of vegetables for you to enjoy around the campfire. It’s even better with a fresh salad on the side!

Chili con carne
Do you want to keep things easy for yourself and limit the amount of washing up you have to do? Then here’s the dish for you: a filling chilli con carne. This is a dish you can easily make in one pan. With some fresh bread on the side it makes for a delicious meal. You can also cook some rice to go with it of course, but then you’ll have to wash up an extra pan.
Ingrediënten:
- 2 tins of kidney- or chili beans
- 1 tin of chopped tomatoes
- 1 tin of maize
- 500 grams minced meat
- 2 onions, roughly chopped
- 1 clove of garlic, finely chopped
- 1 red chili pepper, seeds removed (or not, if you dare!) and cut into rings
Method:
Heat some oil in a pan and gently fry the garlic until golden. Then add the minced meat and fry until brown, adding salt and pepper to taste. Then add the onion and the chilli pepper. Let this cook together for 5 minutes. Then it’s time to add the chopped tomatoes and the beans to the pan. Bring the whole lot to a boil, and let it simmer for another 15 minutes on a low heat. Then it’s ready to eat!

Fish parcel from the barbecue
A barbecue is of course perfect for grilling meat. A sausage, chicken drumstick or pork chop may be what you normally put on the barbecue. But have you ever considered cooking fish on the barbecue? If you go camping near the sea, you can even get delicious fresh fish to use in this dish. Are you under the impression that cooking fish on the barbecue is tricky? Then you’re mistaken. With the recipe below you can make a delicious fish dish in a matter of minutes.
Ingrediënten:
- 4 cod fillets
- 4 tomatoes, sliced
- 1 courgette, sliced
- 2 spring onions, chopped
- Basil
- Pine nuts
- Lemon juice
Method:
Place each fillet of fish on a piece of aluminium foil, that is large enough to close up around the fish. Sprinkle it with lemon juice and salt and pepper to taste. Place the tomatoes, courgette and basil on top of the fish. Then add the spring onions and the pine nuts. And, if you have some handy, you can also sprinkle some balsamic vinegar onto the fish. Fold the parcels closed, and put them on the barbecue for about 15 to 20 minutes. In the meantime, you can cook some rice or pasta to serve with the fish.
